It doesn’t usually make it from the pan to my plate! Prosciutto is salty like parm, so I’m guessing it would go well with the raw fennel.
Because I was using fennel from my garden that was starting to bolt, I covered it with foil so it wouldn’t dry out too much.

I even starred at my husband’s plate to see if he was going to leave any…when he left a few pieces untouched I told him not to waste food and snatched them off his plate…hahahaha…this is definitely one I will be making time and time again. Just tried this recipe for dinner and it was lovely. I thought it had a lovely buttery flavor. I should have doubled the recipe though. If you hate raw fennel, please don’t write this vegetable off until you have tried roasting it first, there is almost zero resemblance between the two. It is BEYOND amazing.
This was delicious! Quick and easy roasted fennel recipe. It resembles a peeled onion bulb that someone has pressed between their hands so it’s no longer round, with a green celery-like stalk and dill-ish fronds. It does not say to roast the fennel first, but I am thinking it might be a good idea. Pick 2 tablespoons of the tender green fronds from the tops of the fennel bulbs and set aside.
