Volpi Guanciale is a traditional, Italian-style dry cured pork jowl. Depending on how you're using guanciale, you may want it sliced thinly or whole to cut into chunks. For the same reason it is superior to any pancetta in rendering for a dish because the fat within those meat fibers, not found in belly meat, will also break down. And, unlike the picture, the piece I received was quite thin resulting in a higher than expected proportion of smoky, oily surface. This very heavily smoked and I was disappointed that I was unable to taste the guanciale flavor.
